Hyssop has bright blue flowers in the summer.  It attracts bees and butterflies.  Hyssop has many medicinal uses.  It has been used to get rid of coughs and reduce inflammation.  Hyssop is used as an ingredient in Eau de Cologne and Chartreuse, the liqueur.  The leaves can be used either fresh or dried in cooking.  Use Hyssop sparingly because the leaves have a strong, slightly bitter, minty flavor.  Finally, please note that Hyssop and Anise Hyssop are two very different plants that are not even closely related.
